I had been cracking my brain think of what should I bake for my boyfriend as part of his birthday present.Chocolate cookies , Peanut Butter cookies was too common and i had bake for him before.I was browsing through my cousin's facebook and came across the almond biscotti that she had recently baked. I decided to give it a try.

Biscotti are twice bake biscuits that originated from a city, Prato from Italy. This biscults are oblong-shaped almond biscuits, made dry and crunchy through cutting the loaf of dough while still hot and fresh from the baking in the oven.

It does not turn out great at first. I went through couple of tries before I successfully baked the Almond biscotti.

Here my experiences when baking :

First try : The Almond biscotti turn out too thin in width. I have problem cutting it up as it tends to break into small pieces. Also due to my carelessness , I overlooked the timing and I get the whole batch burnt during the second batch.

Second try : Everything turn out well. However, I am unable to get the thinly slices of Almond biscotti. Other than that, I had added too little almonds into the dough. I ended up unable to get the nice almond marbled on each slices.

Final try : I went to Daiso to get the bread serrated knife. It really works perfectly. I am able to get the thickness of the Almond biscotti that I wanted. (*The thickness of the Almond biscotti can be depend on each individuals) With the extra almonds added, I am able to get the pretty look on each Almond biscotti.

Overall, It is a pretty easy recipe that give you great biscuits.

Here the recipe :

While browsing through my friend website : love2enjoy , I came across one of the recipes she is sharing ; Baileys and Hot Chocolate Tiramisu . It really tempting . I decided to give it a try since i bought Caramel Baileys when i am in bangkok last month. This my 1st time sharing recipe , hope you guys will love it. Leave comment if u had try my recipes. Thanks lots and enjoy (:

I did some changes to the indgredient for my own reciept. For the orignal Baileys and Hot Chocolate Tiramisu recipes , u can refer to love2enjoy or abittersweetwife.

Caramel Baileys and Hot Chocolate Tiramisu

Ingredients

¼ cup hot water
¼ cup hot chocolate powder
¼ cup Caramel Bailey
2 egg yolks
1 tbs white sugar
2 egg whites
2 cups mascarpone
18 lady fingers

1. Start by adding 2 tsp of hot chocolate mix to hot water, and stir till dissolved. Then add in the Baileys.

2. In a double boiler, whisk (by hand) very quickly and continuously 2 egg yolks and sugar till combined and the mixture lightens and becomes the texture of runny pudding. {Try not to over cook the eggs. If you do they will look more like scrambled eggs.} Remove from heat and set aside.

3. In a separate bowl whisk (with your hand held electric beaters or electric whisk) 2 egg whites till they form stiff peaks. Once done, set aside.

4. Fold the mascarpone cheese into the egg yolk mixture. When the cheese is well combined and creamy, fold it into the egg white mixture.

5. Using 2 mugs, place 3 ladyfingers at the bottom of the cup. Generously brush with the hot cocoa bailey’s liquid. Next spoon the mascarpone mixture on top of the ladyfingers. Then sprinkle with hot chocolate powder. Repeat process 2 times.

6. Top the tiramisu to your desire
